Crock Pot Cowboy Casserole Recipe with Red Potatoes

An easy cowboy casserole recipe made in a slow cooker.

Ingredients
  

  • 1 pound lean ground beef
  • 1/2 cup yellow onion diced
  • 5 red potatoes sliced
  • 1 can dark kidney beans drained (14.5 oz)
  • 1 can diced tomatoes 14.5 oz
  • 1 bag frozen corn 10 oz
  • ½ cup beef broth
  • 1 tablespoon Cholula hot sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 cup cheddar cheese sharp

Method
 

  1. Brown the ground beef on the stovetop. Once the beef is almost done, add diced onions and cook until soft. Drain any excess fat.
  2. In a 6-quart Crock Pot or slow cooker, add the cooked beef mixture, sliced potatoes, kidney beans, diced tomatoes, frozen corn, beef broth, hot sauce, garlic powder, cumin, salt, and pepper.  DO NOT add the cheese at this time. Stir the ingredients well to evenly distribute spices.
  3. Place the lid on the Crock Pot and cook on high for approximately 3 to 3 1/2 hours, or until the potatoes are tender.
  4. Remove the lid, and sprinkle cheese on top. Cover with the lid and cook for an additional 20 minutes, or until the cheese has melted
