- Brown the ground beef on the stovetop. Once the beef is almost done, add diced onions and cook until soft. Drain any excess fat.
- In a 6-quart Crock Pot or slow cooker, add the cooked beef mixture, sliced potatoes, kidney beans, diced tomatoes, frozen corn, beef broth, hot sauce, garlic powder, cumin, salt, and pepper. DO NOT add the cheese at this time. Stir the ingredients well to evenly distribute spices.
- Place the lid on the Crock Pot and cook on high for approximately 3 to 3 1/2 hours, or until the potatoes are tender.
- Remove the lid, and sprinkle cheese on top. Cover with the lid and cook for an additional 20 minutes, or until the cheese has melted
