What is Cowboy Casserole?

Cowboy Casserole is an easy dinner that will “stick to your ribs”. It is made with ground beef, beans, corn, potatoes, and cheese.

Some cowboy casserole recipes include tater tots, but I prefer to use real potatoes. I usually use red potatoes because I can just wash them and slice them and add them to the slow cooker.

While many Cowboy Casserole recipes include some kind of “cream of something” soup, mine doesn’t. Canned cream soups contain gluten which one of my children can’t eat. I also prefer to create a spicier southwest sauce.

Crock Pot Cowboy Casserole Recipe with Red Potatoes

Cooking Time: 3 hours 50 minutes

Total Time:  4 hours

Ingredients:

  • 1 pound lean ground beef
  • 1/2 cup yellow onion, diced
  • 5 red potatoes, sliced
  • 1 can dark kidney beans, drained (14.5 oz)
  • 1 can diced tomatoes (14.5 oz)
  • 1 bag frozen corn (10 oz)
  • ½ cup beef broth
  • 1 tablespoon Cholula hot sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 cup cheddar cheese, sharp

Directions:

  1. Brown the ground beef on the stovetop. Once the beef is almost done, add diced onions and cook until soft. Drain any excess fat.
  2. In a 6-quart Crock Pot or slow cooker, add the cooked beef mixture, sliced potatoes, kidney beans, diced tomatoes, frozen corn, beef broth, hot sauce, garlic powder, cumin, salt, and pepper.  DO NOT add the cheese at this time. Stir the ingredients well to evenly distribute spices. cowboy casserole in crock pot
  3. Place the lid on the Crock Pot and cook on high for approximately 3 to 3 1/2 hours, or until the potatoes are tender.
  4. Remove the lid, and sprinkle cheese on top. Cover with the lid and cook for an additional 20 minutes, or until the cheese has melted.
